Busy.. Busy

Life lately has been a little CRAZY..... Our schedule every weekday is B waking up at 5 to get to the gym before work, Isabel and I at home fighting the terrible two's, 1 hour naps while I try and squeeze in a little bit of h/w, B gets home around 5:30, I leave for the gym for a couple hours, get home to prepare dinner, the struggle of bedtime, more h/w to get done, and FINALLY at around 11 we stumble into bed!! Now the weekends the role reverse a little, I go off to work while B stays home, and Sunday is 3 hours in church (1st hour not so much fun with a 20 month old). I don't know how we do it every week, but I do know I wouldn't want it any other way.

Day 2

Turkey Chili Taco Soup

My mom has been made this before and I loved it! So I had to make it for us. It is so simple and it makes a ton so you can freeze it and save it for later. You need a can of black beans(make sure you drain them), a can of fat-free refried beans, a can of diced tomatoes with green chilies, a can of tomato sauce, taco seasoning, lean ground turkey, a bell pepper(diced), a onion(diced) and finally a can of corn. Brown the meat, then add the peppers and onions cook for about 2 minutes, then add everything else, and let it boil for 10 minutes. Add whatever you like to top it off and Serve! I have been doing Weight Watchers for a few months now and have lost a total of 15 lbs. I did take a little break during the holiday(too many good sweets), but I'm back on it and this time I wanted to try new recipes for our dinners. We were getting a little sick of plain chicken and rice :/. So this week I decided to try something new everyday of the week. I found this great website with tons of good, delicious meals here!


Day 1

Baked Spaghetti Squash with Grilled chicken and marinara.

Its so easy you just take one medium to large spaghetti squash, cut it in half, clean out all the seeds and protein, sprinkle with salt and pepper, and roast for about an hour on 325 degrees. Grill chicken while the squash is roasting and cut into strips. After the squash is during, use a fork to fluff the middle(it will look like spaghetti). Pour a little marinara on top, then the chicken, and top that with more marinara and mozzarella cheese. Place back in oven for 8 min. Then Serve! Yummy :)

7 Months old!


Today Isabel is 7 Months old! She is an independent child always rolling on the ground, and trying to grab everything and put it in her month. The days of leaving her alone in one place are long gone! She eats solids all the time now, I haven't found anything she doesn't like. At this moment she is cutting a tooth and is a bit cranky at night. It is going by so fast, but every stage is fun and new. I love her so much.

Weekend in Oregon


This weekend Bridger, Isabel and I heading to to Salem, OR to visit Bridger's oldest brother Kyle and his family. We had a great time, Isabel got a lot of attention from Myra and Derek, we went to the park and played on the Carousel, and ate lots of food! It was a nice relaxing weekend! Thanks Kyle and Virginia
